Chocolate Chip Cranberry Granola Bars | Gluten Free

These Granola Bars are the perfect snack to have on hand. They are made from minimal ingredients and all ingredients can be gluten free or not depending on your diet! The best part about these is that they are so simple to make, they save you money from buying pre packaged granola bars, and you know exactly what is gong into your body. These store for 1 week in an air tight container if not placed in the fridge (I wrap mine in Beeswrap). If you refrigerate them they will last 2 weeks, Many food companies use the term “natural flavors” in their ingredient list. I have seen this term on many granola bar boxes that are claimed as “all natural”. This term term used by many food companies to hide the highly processed artificial flavors and chemical additives. No need to stress about that with these!

The first thing you are going to want to do is to preheat your oven to 325 degrees Fahrenheit.

You are going to take 3 cups of rolled oats (I use Bob’s Red Mills Gluten Free Oats) and 1 cup of shredded coconut (unsweetened or sweetened) and you are going to put it in a food processor. I use a manual food processor and I get it to the texture shown below. You do not want to process it too much to where the oats are tiny but rather just enough to help make them easier to work with when forming the granola bars.

You then want to add the oats and shredded coconut to a mixer, such as a stand Kitchenaid mixer or you can use a manual mixer. Then add 1/4 Cup of Maple Syrup and 1/4 Cup of Honey. Add 6 tablespoons of unsalted pure Peanut Butter (or any nut butter). Add 2 teaspoons of vanilla and 1 teaspoon of cinnamon (optional, I find it adds a good flavor). Add two tablespoons of Chia Seeds and 1/2 Cup of Gluten Free or regular flour. Lastly add in about 1/3 cup of Chocolate Chips and about 1/4 Cup of dried cranberries (unsweetened or sweetened).

Mix these ingredients in your stand mixer or with a manual mixer until combined. Then slowly add in 1/2 cup of water and mix. The mixture should be sticky so you can form it and all the ingredients stay together when you do so. You then want to take a pan and line it with parchment paper and spread the mixture on a pan. Use your hands to spread out the granola mixture and form it into a big rectangle/square. You can make them as thick or thin as you want. I like to make mine a little thick (not crazy thick) so that they are chewy.

You then want to pre cut your granola before placing it in the oven. Once you do that place it in the oven for 18-20 min depending on your oven. My oven heats very quickly so I take mine out right at 18 minutes.

You are done! These are great snacks especially for on the go! I like that they are sweetened with maple syrup and honey. They are not over overpoweringly sweet and make a great wholesome snack for adults and kids!
