Dates are such a great fruit. They can sweeten so many things and we can add them to sweeten our desserts that we are used to sweetening with added sugars. That is why I LOVE Dates! I make cake balls, cookies, and more with Dates and the fact that my kids do not even notice is even better! They see them as a dessert and I see it as a healthier snack with no added sugars! It is just an awesome fruit and if you haven’t tried them out yet you need to! I love chocolate chip cookies, as do my husband and kids so making a healthier alternative and not contributing to their added sugar daily intake these are a perfect healthier cookie to make for them! Dates have a low glycemic index which means they are less likely to spike your blood sugar level, how awesome is that! High fiber content is great!
You are going to want to use a food processor for this but a good high powered blender will do as well!
For this recipe you will need 1 Cup of Pitted Medjool Dates, 1/3 Cup Cashew Butter, 2 Teaspoons Vanilla Extract, 3 Tablespoons Whole Milk or any other dairy free milk, 2/3 Cup Rolled Oats (blended until it becomes flour texture), 1 Teaspoon Baking Powder, Pinch of salt and 1/2 Cup Dark Chocolate Chips.
The first thing you want to do is blend your Rolled Oats until they turn into a flour texture. You can also just use Oat Flour (1/2 Cup + 2 Tablespoons). The rolled oats and blending into flour is a budget friendlier option!
Set the oats aside and now add your dates, cashew butter, vanilla, and milk into your food processor or high powered blender. Blend until smooth.
Now add in the oats, baking powder, and salt and process or blend until it becomes a dough scraping the sides an necessary.
Take out the dough and put it into a bowl so that you can mix in the chocolate chips.
Line a baking sheet with parchment paper. Scoop out 1 tablespoons full of dough and roll them into balls and place onto the baking sheet.
Flatten the dough balls with your hands before baking! (important as these do not bake like regular cookies so you want to flatten them a bit with your hands).
Bake the cookies at 350 Degrees F for 13-15 minutes. Take out, let cool, and enjoy!
