Sweet potatoes are not just a Thanksgiving side they are perfect to have through the year! I love making sweet potato fries and mashed sweet potatoes but lets face it we don’t always have time to be sitting by the stove top. This is where the wonderful invention of the Instant Pot comes in! I LOVE my Instant Pot. As a mom of two toddlers, having cooking equipment that lets me spend less time in the kitchen and more time with my kids while making healthy food is the absolute best! Buttery, sweet, and creamy these are the perfect side to any meal!
For this recipe you will need 2 pounds of Sweet Potatoes, 3 Tablespoons of butter, 1/4 Teaspoon of Cinnamon, and 1 Teaspoon of Salt.
You want to first start out by peeling 2 pounds of sweet potatoes. You will then cut them up into 2 inch cubes (doesn’t have to be exact just cut them up into small cubes).
Prep your Instant Pot by adding one cup of water then adding the diced sweet potatoes. Add the Lid and make sure it is set to sealing. Then cook it on manual for 10 minutes.
Once done you can do a quick release or let it manually release. Then drain the sweet potatoes in a colander. Place the sweet potatoes in a large bowl and add the butter, cinnamon, and salt. Mash it all together until butter is fully melted and the texture of the potatoes are to your liking and that is it! Super simple! Enjoy!
