These Chicken Carnitas are both easy and delicious! Perfect flavor and made in the instant pot in 10-15 minutes! I love making this for a quick dinner and even on Sunday when I meal prep for the week so that I can have them for lunches. I use them on tacos, salads, burrito bowls and more! I like to stick them in the broiler after they have cooked on the instant pot to crispen them a bit!
For this recipe you will need 4 chicken breasts, 6 cloves of minced garlic, 1 tablespoon cumin, 1 tablespoon oregano, 1 teaspoon chili powder, 2 tablespoons olive oil, 1 small onion diced, Juice of one orange, juice of two limes, 2 cups chicken broth, and fresh cilantro.
You want to start by cutting your chicken breasts to make them thinner. I like to cut mine right down the middle two make two thinner chicken breasts from a full one. This will help it cook quicker in the Instant Pot.
You then want to turn your instant pot on to saute. Add the olive oil and the diced onion. Cook until onions are soft then add the minced garlic and cook until fragrant (1-2 Minutes)
Add in the Chicken broth, Orange juice, Lime Juice, and all the seasonings to the Instant Pot. Mix it all together and then add the chicken breasts. Turn saute mode off and the add the Instant Pot lid and close and set it to sealing. Cook on Manual for 10-15 minutes.
Once done Shred the chicken with a fork and add it to a baking sheet. Broil the chicken for 4-5 minutes until it crispens slightly! Top with cilantro and enjoy!
