Vanilla Cashew Butter Cookies

These vanilla cashew butter cookies are date sweetened! I love making these for my toddlers since they have no added sugar! I give it to them for snack time and they are freezer friendly so you can make a big batch and freeze them for use later! These are similar to the chocolate chip date cookies so if you are just starting out on the date sweetened treats journey I would try those out first since they are a bit sweeter due to the chocolate chips (since the chocolate chips have sugar).

To make these you will need 2/3 Cup of rolled oats, 1 cup pitted medjool dates, 1/3 cup cashew butter, 2 teaspoons vanilla extract, 3 tablespoons whole milk or milk of choice, 1 teaspoon baking powder, and a pinch of salt.

The first thing you will do is blend your rolled oats in a high powered blender. Until it becomes the consistency of flour. You can also use already ground oat flour and use 1/2 cup. I just find the rolled oats to be an easy option and cheaper than oat flour itself!

Set the blended oats aside. Add your dates, cashew butter, vanilla, and milk into a food processor. (you can also use a high powered blender but it takes a bit of scraping down the sides so everything gets blended well due to the dates). Blend until smooth.

Now add in the oats, baking powder, and salt and blend until it becomes a dough.

Line a baking sheet with parchment paper and preheat your oven to 350 degrees F.

Scoop out 1 tablespoons full of dough and roll them into balls and place onto baking sheet.

Flatten the dough balls with the palm of your hand before baking. (important as these do not bake like regular cookies so you want to flatten them a bit with your hand)

Bake the cookies for 11-13 minutes! Take out let cool and enjoy! Feel free to use other nut butters as well or use peanut butter to turn these into peanut butter date cookies! Enjoy!
