Spinach Banana Pancakes

I promise you can’t taste the spinach in these! My daughters love these! A great way to sneak spinach into their diet in a cool way! Kids love color and these green pancakes are so fun! They are super easy to make in a blender then I like to cook them on a cast iron pan with grass-fed butter!

For this recipe you will need 1 cup of Rolled Oats, 1 cup of Unbleached All Purpose Flour, 2 teaspoons Baking Powder, 1/2 teaspoon Cinnamon, 2 Mashed Bananas, 1/2 Cup Milk of choice, you may need more depending on how thick your batter comes out (I like to use whole milk), 2 Pasture Raised Eggs, 2 Tablespoons Avocado Oil, 2 Handfuls of Spinach Leaves (about 1 1/2 cups), 2 Tablespoons Pure Maple Syrup.

You want to start out by blending the Rolled Oats in a blender. Once fully blended into a flour consistency set aside.

Add the Bananas, Spinach, Milk, Eggs, Avocado Oil, and Maple Syrup to the blender and blend until combined.

Add in the Blended Oats, All Purpose Flour, Baking Powder, and Cinnamon to the blender and mix with the wet ingredients until fully combined.

Heat a pan to medium heat. Use butter or oil to cook the pancakes. Pour the pancake batter in 1/4 cup fulls. Flip pancake once bubbles form at the top about 2-3 minutes. Then cook the other side for same length. Enjoy with syrup and toppings of choice!

These are freezer friendly as well! Make sure you first freeze them without touching so they don’t stick. Once frozen you can store them all together!

  • 1/2 Teaspoon Cinnamon

  • 2 Mashed Bananas

  • 1/2 Cup Whole Milk
    add more if batter is too thick
    (Or milk of choice)

  • 1 1/2 Cups Spinach Leaves

  • 2 Tablespoons Pure Maple Syrup
