Such a yummy twist on traditional taco night! Taco stuffed sweet potatoes are delicious and an easy week night meal! I love to top it with sour cream, guacamole, diced onion, tomatoes, lettuce, and more! I had time this night so I cooked my sweet potatoes in the oven but you can cook them fast in the microwave as well! I do not recommend the instant pot as it will make them too soft.
For this recipe you will need 4 medium-large sweet potatoes, 1 lb ground beef, 1 tablespoon chili powder, 1/2 tablespoon cumin, 1 teaspoon garlic powder, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/3 cup water, 1 small onion diced, 1/2 cup cheddar cheese, and 1 diced tomato. You can also do sour cream, lettuce guacamole, etc as extra toppings!
You want to start out by preheating your oven to 400 degrees F. Place the sweet potatoes on a baking sheet and poke holes in them with a fork. Bake for 30-45 minutes until a bit tender. You can also poke holes and cook them in the microwave about ten minutes or longer depending on the strength of your microwave.
Next you want to cook the ground beef. Brown your ground beef in a large skillet over medium high heat. Then add 1/3 cup of water and all the seasonings. Cook for another 3-5 minutes.
Once the sweet potatoes are finished let them cool a bit and then carve them out in the center to create something similar to a boat. Then stuff the potatoes with ground beef and top with onions, tomatoes, lettuce, sour cream and cheese! Enjoy!
