Pumpkin Spice Chocolate Chip Cookies

Another awesome Fall Dessert in the books. So truth be told I used to not like Pumpkin Spice. I just thought that it would taste like straight up pumpkin and to be honest having it as a dessert I was just like no way this can’t be good… but man I was so wrong! I wanted to take that delicious pumpkin spice flavor and add it to my other favorite dessert flavor… CHOCOLATE! If you know me you know I love cookies, it’s my dessert of choice! These cookies I created are fluffy, chewy, and just plain delicious! I hope you enjoy them and Happy FALL!

For this recipe you will need 1 stick of Softened Butter (1/2 a cup), 1/2 Cup Coconut Sugar, 1/2 Cup Organic Cane Sugar, 1 Teaspoon Vanilla, 5 Tablespoons Pumpkin Puree, 2 Cups All Purpose Flour or Gluten Free Flour Blend, 1 Egg, 3/4 Teaspoon Aluminum Free Baking Powder, 1 Teaspoon Pumpkin Pie Spice, 1 3/4 Teaspoons Cinnamon, 1 Cup Dark Chocolate Chips.

Preheat your oven to 350 Degrees F. You are going to take the softened butter, coconut sugar, cane sugar, vanilla, and pumpkin puree and beat until combined. Add in the flour, baking powder, all the spices, and the egg and beat until combined fully. Fold in the Chocolate Chips.

Get a cookie sheet ready with parchment paper and roll two tablespoons of cookie dough each onto the pan. Makes about 12-24 cookies depending on how big you make them! Place cookie dough balls onto the baking sheet and bake for 13-15 minutes! Let cool slightly and enjoy!
