Toddler Friendly Blender Spinach Pancakes – Gluten and Dairy Free!

I make these pancakes for my girls often! I make a big batch on Sunday and freeze them to have on hand for the week! I love that I know what ingredients are in these pancakes and knowing that I am giving them some greens in the morning without them even realizing it is great! The green color the spinach gives the pancakes makes it fun as well. We like to call them Green Monster Pancakes or if near the holidays, Grinch Pancakes! All you need are a few ingredients and a blender! I like to cook them over a cast iron skillet on medium heat with coconut oil but feel free to use butter as well!

For this recipe you will need 2 1/2 Cups of Rolled Oats (I like the sprouted oats you can find a huge bag at Costco cheaper than buying oat flour you can just blend the oats up in a blender and create your own oat flour), 2 Cups Fresh Spinach, 2 Mashed Bananas, 2 Eggs, 1 Cup of Almond Milk (or milk of choice), 4 Tablespoons Avocado Oil, 2 Teaspoons Cinnamon, 2 Teaspoons Vanilla Extract, 2 Teaspoons Aluminum Free Baking Powder (I like Trader Joes brand), 1/2 Teaspoon of Salt.

First you want to add your oats to a blender and blend until they become a flour consistency. Then add in the rest of the ingredients and blend until fully combined. If needed to make thicker consistency add in more oat flour or any regular flour and to thin the batter add in more of your milk of choice.

To cook the pancakes heat a cast iron (or skillet of choice) over medium heat add coconut oil or butter. Scoop 1/4 cup full of the batter and pour onto skillet. Cook each side for about 2-3 minutes. Do the same with the rest of the batter. You will get about 10 medium sized pancakes or more if you make them smaller.

I like to freeze these for use throughout the week. Make sure when you freeze them first you put them on a plate not stacked on top of each other so they wont stick. Once frozen you can transfer to Ziploc bags in the freezer.
