Salmon with Creamy Tuscan Garlic Sauce

We have salmon at least once a week in our house! Such a great way to get omega 3s. I can often get bored when I do my normal bake in the oven salmon recipe so I decided I wanted to change it up and now this is my go to recipe for salmon. It is delicious, garlicy, creamy, and with loads of flavor from burst tomatoes. It will make you excited for Salmon night! I like to serve this over green beans with the sauce drizzled on top or even rice!

To make this recipe you will need two fillets of wild caught salmon, 6 cloves of minced garlic, 1 Tablespoon Olive Oil, 3 tablespoons of Butter, 1 Cup of sweet cherry tomatoes, 1 Cup of spinach, 1 Cup of Heavy Cream, 1 Teaspoon Salt, 1/2 Teaspoon Pepper, and 1/4 Teaspoon Cayenne Pepper.

First you want to grab a medium sized skillet (I like to use cast iron), and add olive oil to medium high heat. Pat your salmon dry and season with salt and pepper. Once pan is hot Cook the Salmon until browned on each side about 3-5 minutes each side depending on how you like your salmon cooked.

Remove your salmon and set aside.

Bring heat to medium low add in the butter and then cook the minced garlic until fragrant about 1 minute. Bring heat back to medium add in the cherry tomatoes and cook until tomatoes start to burst open.

Add in the heavy cream, salt, pepper, and cayenne. Then add in the spinach. Once spinach is wilted add in the Salmon again. Bring sauce to a boil and then lower heat to medium again. Once sauce is a bit thicker you can turn off heat and serve!
