Roasted Paprika Chicken and Veggies

A good ole roast chicken is such a perfect dinner for cozy winter nights. The great thing about this dinner is that its incredibly easy to prep and you can use practically whatever vegetable you have in your fridge. For this particular recipe I used Brussel Sprouts, Sweet Potatoes, and Red Onions. These were all veggies that were nearing their end in my fridge so it was time to use them up and a perfect way to use a variety of veggies is to throw them in the oven to roast.

For this Recipe you will need 2 Sweet Potatoes, 10-12 Brussel Sprouts, 1 Red Onion, 1 Whole Chicken (Giblets Removed), 6 Cloves Minced Garlic, 2 Teaspoons Salt, 1 1/2 Teaspoon Pepper, 1 1/2 Teaspoon Paprika, and 2 Tablespoons of Olive Oil.

The first thing I do is chop up all my vegetables. I then throw them in a mixing bowl and add in one tablespoon of olive oil, 1 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon paprika, and three minced cloves of garlic. I mix it all up with my hands and set aside.

I then get the whole chicken ready by grabbing a small bowl and adding the olive oil to it then the salt, pepper, paprika, and minced garlic. I then use a fork to mix that mixture up and pour it over the chicken and spread it out thru the chicken with my hands.

You can bake this on a baking sheet or I’m using a big 15 inch cast iron pan that holds my veggies and chicken. I bake everything at 425 Degrees F for about 1 hour to an hour and 15 minutes. Enjoy!
