Who knew making chicken nuggets at home was actually super easy! Gluten Free Chicken Nuggets can get pricey at the store and lets face it we all like an easy lunch for kiddos! Even better if its easy and healthy! All you need are three ingredients and a few spices and you have yourself easy freezer friendly chicken nuggets. I love that you can easily hide the sweet potato so the kiddos don’t even notice!
For this recipe you will need gluten free bread crumbs or whatever bread crumbs you choose, 1 lb of Ground Chicken, 1 Sweet Potato, 1 Tsp Garlic Powder, 1 Tsp Onion Powder, and 1/2 tsp Salt.
First you want to peel and dice your sweet potato. Cook the sweet potato in a pot of boiling water until they are soft enough to mash. Remove from boiling water and let cool.
Once cooled mash the sweet potatoes with a potato masher. Add in the ground chicken and the spices and mash everything together with a potato masher until fully incorporated.
Using a tablespoon scoop up the chicken mixture and form it into a ball, then coat it fully with the bread crumbs. Place each ball on a baking sheet then flatten and form into a nugget shape.
Bake the nuggets at 375 for about 25 minutes until the bottom of the nuggets are a golden brown color.
You can keep these in the fridge (about 3-4 days) and reheat in the oven or microwave or you can freeze them and reheat! I like to reheat it at 375 for a few minutes in the oven since I like the crispness of it cooked in the oven!
