These cookies use only 4 ingredients that I am sure you probably already have on hand. They are also flourless! You can use any nut butter for this but my family is a peanut butter lover so we used peanut butter! I like the almond butter variation as well. You can also skip the chocolate chips but why would we do that!?
Grab a large mixing bowl and add in one cup of Peanut Butter (or nut butter of choice), 3/4 Cup of Coconut Sugar, and One Egg. Whisk together all ingredients. Fold in 1/2 Cup of Chocolate Chips.
Form into one tablespoon balls and place on cookie baking sheet. I like to line mine with unbleached parchment paper so that I don’t have to clean the pan afterwards!
Bake at 350 for about 12 minutes. Let cool to harden up a bit and then enjoy! I like to store them in the fridge and I feel like they taste better chilled!
