Easy Chicken Burrito Bowls

When I need a quick meal to make I usually always have the ingredients for burrito bowls. The best part is you can customize them how you want and you can cook the rice in the instant pot leaving you with just the chicken to cook over the stovetop. To make this even easier have pre made taco seasoning on hand such as taco seasoning packets packets (I like the siete taco seasoning packets). This is also a great toddler friendly meal as you can customize the bowls or leave everything separated for picky toddlers.

For this recipe you will need about 3-4 Chicken Breasts cut up into medium size squared pieces. Heat a skillet on medium high heat. Add cut up chicken to a bowl and add in 2 tablespoons of olive oil and the taco seasoning. Mix it all with your hands. Add it into the pan and cook the chicken fully. About 7-10 minutes.

For the rice we will use the instant pot. Add in 1 Cup of rice and 1 1/2 Cups of water and juice of one lime to the instant pot. Hit the rice cooking button and let it cook. Once done manual release and add in cilantro before serving.

For the easy guac topping we will need two avocados, juice of one lime, and a 1/2 teaspoon of salt. Mash it together to form guac.

Cut up tomatoes, lettuce, and shred cheese for toppings. You can also put out sour cream or any salsas you like.

To make this easy to serve I like to put it all on a platter and let everyone build their own bowls. It is a delicious quick and easy dinner!
