Italian Sausage Lasagna

I love me some lasagna. I love the traditional beef lasagna and I also love a good veggie lasagna, but today I am focusing on my husband’s favorite that I make and that is the pork sausage lasagna. We recently got some delicious pasture raised ground pork sausage from a local farm and I decided to make some sausage lasagna for dinner. I love adding onion and garlic to practically everything so of course that is included in this recipe! I also used jovial brown rice lasagna noodles to make this gluten free but feel free to use whatever lasagna noodle you like! Be sure to follow the lasagna noodle instructions as some you need to boil before hand (which I usually always do because I feel like when you don’t the noodles come out too crunchy) and some you do not have to boil before you bake.

For this recipe you will need 1 Pound of Ground Italian Pork Sausage, 1 Diced Onion, 6 Minced Garlic Cloves, 9 Lasagna Noodles (boil or no boil), 15 oz Ricotta Cheese, 3 Cups Mozzarella Cheese, and 24 oz Marinara Sauce (we love Raos Homemade).

The first thing you want to do is boil your lasagna noodles according to the package instructions. If you bought no boil noodles you can skip this step. I like to boil the noodles because I feel that they cook better this way in the oven after being boiled. After boiling remove them to cool off.

Next you want to add olive oil to a medium sized skillet on medium high heat and add in your diced onions. Cook them for about 3-5 minutes. Then add in your pork sausage and minced garlic and cook until your pork sausage is browned.

Now in a baking dish you want to layer your lasagna. I layer it in this order:

Layer of Marinara Sauce, Lasagna noodles, Ricotta Cheese, Pork Sausage, and Mozzarella Cheese and repeat. I do about three layers. The very top layer I just do lasagna noodles, ricotta, and mozzarella.

Bake in a 375 Degree oven for 45-50 minutes.
