I love making a batch of these whenever I have ripe bananas on hand! They are freezer friendly as well so you can whip up a batch and freeze them for the week! They use simple and good ingredients and they are oh so fluffy! I love making them in a cast iron pan with some butter! Serve them with some maple syrup, raw honey, berries, any kind of nut butter, etc. so many options! These are great for kids as well my daughters love them and I love that I can freeze them to have some easy breakfast options on hand because if you have small kids you know how chaotic mornings can be!
These are my favorite to make when I have ripe bananas on hand! Especially since they are so fluffy and delicious and best of all....Freezer Friendly!
Add bananas, avocado oil, maple syrup, eggs and vanilla extract to a blender. Blend until combined about 15 seconds on medium speed.
Add in the oat flour, all purpose flour, baking powder, and milk. Blend until combined. Do not over blend. I did mine on high for about 30-60 seconds.
Heat a cast iron pan (or any pan) on medium heat and add butter. Once pan is heated add 1/3 cup fulls of pancake mix onto the pan and cook for 2-3 minutes per side.
To freeze lay them flat on a plate making sure they are not touching each other and place in freezer. Once frozen you then can freeze them in a Ziploc bag. This ensures they wont stick together when first being frozen making it a nightmare to pull apart when you need them.
