Ginger Chicken Stir Fry

Fast dinners are my favorite especially when they require few dishes. The less dishes to do the BETTER! This meal is so yummy, has a good amount of vegetables, and is quick! To make this meal even quicker prep the veggies and the chicken by cutting them up the night before that way the next day all you need to do is toss it in the pan! Hope you enjoy the delicious flavor of the ginger and lemon. They really come together in this dish making the chicken and veggies extra tasty.

Ginger Chicken Stir Fry
This easy dinner is the perfect stir fry! The ginger and the lemon really come together to give the chicken and the veggies such a delicious taste. I hope you enjoy this easy dinner!
  1. Heat a skillet on medium high heat. Add in the olive oil and the chicken breasts cubes. Add a pinch of salt and pepper and cook the chicken breast cubes until done. (about 8-10 minutes) then lower the heat.
  2. Prep the Lemon Ginger Sauce. In a small sauce pan over medium heat add the water, broth, lemon juice, coconut aminos, coconut sugar, salt, and ginger powder. Cook until the coconut sugar is dissolved (about a minute or two)
  3. In a separate small bowl combine 2 TBSP of water with the arrowroot powder or cornstarch. Add the mixture to the lemon ginger sauce and mix to help thicken it. Bring the lemon ginger sauce to a boil and let it boil for about one minute watching it closely so that it doesn't boil over.
  4. Whisk the sauce and remove from heat and set aside.
  5. Once chicken is cooked add in the lemon ginger sauce and all the vegetables and stir to coat the chicken and veggies in the sauce. Cook until veggies are soft. Depending on how soft you like your veggies this could take between 15-20 minutes. I cook mine on medium high heat and keep tossing the chicken and veggies to get my veggies nice and soft.
  6. Once finished top with the sesame seeds and enjoy!
