Smoked Paprika Salmon with Zucchini and Potatoes

I love a good sheet pan dinner. It makes for an easy clean up and something I can just throw together and throw in the oven! Salmon has so many great health benefits. When purchasing Salmon do your best to buy wild caught vice farmed! The smoked paprika and dill in this dish add such a great flavor to the salmon and the delicious juices seep thru the potatoes and the zuchinni making it extra delicious! I hope you enjoy!

  1. Slice the potato and the zucchini thinly. Just like you would when making scalloped potatoes. Add them to a large bowl.
  2. Drizzle two tablespoons of olive oil in the bowl and add some salt and pepper. Mix with it all with your hands.
  3. In a seperate bowl make the sauce to drizzle over the salmon. Add 1/4 cup of olive oil to the bowl and add two teaspoons of smoked paprika. Add a pinch of salt and pepper and then add the juice of a whole lemon. Add the minced garlic cloves and the dill. Mix up the sauce with a fork.
  4. Assemble the veggies on the sheet pan. You will be adding the Salmon Fillets on top of the veggies. Add your salmon fillets on top of the potatoes and zuchinni and drizzle the sauce all over them.
  5. Bake at 400 Degrees F for 25-30 minutes! Enjoy!
