Tomato and Spinach Chicken with Creamy Parmesan Sauce

This is the perfect twist to a boring chicken breast dinner. The creamy parmesan sauce makes this the perfect comfort food and is so yummy ladled over potatoes or rice! This will take you about 30 minutes and it is a one pot meal which makes it an easy weeknight dinner to whip up! I hope you enjoy!

This one pot chicken dinner is the perfect main dish! The creamy sauce is perfect to drizzle on potatoes or rice as a side!

Instructions
  1. Heat a cast iron skillet (or skillet of your choosing) to medium high heat. Then Season your chicken breasts with the salt, pepper, and thyme and cook on skillet.
  2. Melt half of the butter on the skillet and place chicken breasts in the skillet. Cook on each side for about 5-7 minutes until they are fully cooked. TIP: Slice thick chicken breasts down the middle to have thinner chicken breasts. This makes for faster cooking!
  3. Once fully cooked remove the chicken breasts and set aside on a plate.
  4. Add in the rest of the butter to the pan and cook the onion and the minced garlic and sun dried tomatoes for 1-2 minutes. Add in the chicken broth and the heavy cream and the parmesan cheese.
  5. Cook until smooth. Add more salt and pepper as needed.
  6. Add in the chicken breasts and spinach and pour the sauce over the breasts and let warm for 2-3 minutes until the spinach is all wilted.
  7. Serve and enjoy! I like serving this with roasted potatoes and pouring some of the parmesan sauce over the potatoes!
